SUNFLOWER DIP

Our favourite way to eat these super crunchy sweet and nutty

super-shoots besides straight up out the tub is to blend 2 tubs of fresh sunflower shoots into a dip with two tablespoons of toasted sesame oil or organic cold pressed olive oil, some salt and a pinch or two of cayenne pepper One tbs spoon of coconut cream (keep it vegan) or cottage cheese will give it a more creamy dreamy texture. Served with grilled giant mushrooms and slow roasted Mediterranean veggies for a light meal time or with home baked crunchy seed crackers made with half a cup of sunflower seeds, black sesame as well as golden sesame seeds, salt and black pepper to taste blended with enough water to make into a rough textured sticky dough. Being big on veg juicing I include a couple tbs of the left-over pulp that includes wheatgrass carrot cucumber and ginger into the mix. Heat the oven to 120 degrees, spread the mixture onto a lined baking tray and bake for 75 – 80min till lightly crisp. It will be more crunchy as it cools.
